Slow Cooker Pot Roast

Last night I made probably the best pot roast I have cooked. So good and so easy. Enjoy.

Ingredients:

  • 2-3 lbs. Beef Top Round Roast
  • 1 T. cornstarch
  • 2 T. worcestershire sauce
  • Coarse salt, ground pepper, red pepper flakes, Mrs. Dash original seasoning
  • 1 small bag baby carrots
  • 1-2 medium onions, cut into wedges
  • 4 russet potatoes, cut into wedges
  • 5 stalks celery, cut into 2″ pieces
  • 1 cup butternut squash
  • 1 can Rotel tomatoes

Directions:

  1. Combine cornstarch with 2 T. cold water in slow cooker and stir until smooth.
  2. Add carrots, onions, and potatoes. Season with salt, peppers, and Mrs. Dash and toss to coat.
  3. Sprinkle roast with 1 tsp. salt and 1/2 tsp. pepper. Place seasoned roast on top of potatoes, carrots and onions.
  4. Cook on High for 6 hours or Low for 10. During last hour of cooking add celery, squash and tomatoes.
  5. When done, slice roast against the grain.
