Last night I made probably the best pot roast I have cooked. So good and so easy. Enjoy.
Ingredients:
- 2-3 lbs. Beef Top Round Roast
- 1 T. cornstarch
- 2 T. worcestershire sauce
- Coarse salt, ground pepper, red pepper flakes, Mrs. Dash original seasoning
- 1 small bag baby carrots
- 1-2 medium onions, cut into wedges
- 4 russet potatoes, cut into wedges
- 5 stalks celery, cut into 2″ pieces
- 1 cup butternut squash
- 1 can Rotel tomatoes
Directions:
- Combine cornstarch with 2 T. cold water in slow cooker and stir until smooth.
- Add carrots, onions, and potatoes. Season with salt, peppers, and Mrs. Dash and toss to coat.
- Sprinkle roast with 1 tsp. salt and 1/2 tsp. pepper. Place seasoned roast on top of potatoes, carrots and onions.
- Cook on High for 6 hours or Low for 10. During last hour of cooking add celery, squash and tomatoes.
- When done, slice roast against the grain.
