I hope everyone had a nice Thanksgiving.
I’m down in Southern Cali again for the holiday and ensuing family reunion. My job for this year is family cookie baker. I’ve been making a different batch of cookies everyday for a week or so now and I was trying to decide which cookies to make when I came across this recipe my mother had given to me. This cookie has everything in it and I’m pretty sure it can be considered breakfast food since it has two different kinds of cereal (wink, wink). The favor of this cookie is kind of a “payday” bar.

Ranger Cookies
Ingredients:
- 1 cup shortening or margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla
- 2 cups oats
- 2 cups corn flakes
- 1/2 cup flaked coconut
- 1 cup salted peanuts
Cream together shortening and sugars until fluffy. Add eggs. Add flour, salt, baking powder and soda, mix thoroughly. Add vanilla. Stir in oats, cornflakes, coconut and peanuts.
Mix well.
Bake in rounded tablespoonfuls at 350* for 10-12 minutes depending on your oven.
