Pumpkin Pie Pudding

It’s that time again. Another pumpkin recipe coming your way. I am determined to try as many pumpkin recipes as I find interesting this winter. This time I tried pumpkin pie pudding. I think it tastes just like the filling of a pumpkin pie, rather than just pumpkin flavored pudding. It was quick and easy, and pretty tasty, would probably be really yummy with graham crackers or Nilla wafers.

Ingredients:

  • 1 – 5 oz. pkg Vanilla Instant Pudding*
  • 1 – 15 oz. can Evaporated Milk
  • 1 tsp. Pumpkin Pie Spice
  • 1 – 15 oz. pumpkin puree
  • Whipped Cream for garnish

Combine pudding mix and evaporated milk, stirring for about 2 minutes. Place in the fridge for 5 minutes. Remove from fridge add pumpkin pie spice and pumpkin puree. Stir until combined. Serve immediately with whipped cream.

*I actually had a 3oz pkg of vanilla pudding and a 3 oz pkg of cheesecake pudding and mixed them together and kind of eyeballed 5 oz.
