My good friend invited us to dinner the other night and she was going to show me how she makes egg rolls. Yummy.
We had some wine and chatted for a while and then finally got around to actually making dinner. I hadn’t made home-made egg rolls since the late eighties (yeah I know my age is showing). These turned out great and we had a fabulous evening. Hope you try and enjoy this recipe.
Egg Rolls:
- 1 pkg egg roll wrappers
- 3 tbsp vegetable oil
- 1/2 cup finally chopped celery
- 3/4 cup shredded cabbage
- 4 finely chopped scallions
- 1/2 cup diced shrimp (optional)
- 1 to 1 1/2 cups ground pork
- 1 can chopped water chestnuts
- 1/2 cup bean sprouts
- Garlic powder
- 1/4 cup soy sauce
- 1/2 tsp sugar
- a small grating of ginger (optional)
Heat vegetable oil. Stir fry briefly in oil the celery, cabbage and scallions. Add shrimp and pork and cook for 3 minutes. Add water chestnuts, bean sprouts, garlic powder, soy sauce, ginger root and sugar, fry for 5 minutes.
Cool and drain filling mixture.
Place 4 Tbsps of filling in center of egg roll wrappers.
Fold up into envelope shape and wet the edges of wrapper with a little water on your finger tips to hold the envelope closed.
Deep fry in the method of your choice we user a fryer.
Serve with sweet and sour sauce recipe below.
Sweet and Sour Sauce:
- 2 tbsp soy sauce
- 1/2 cup sugar
- 1 cup water
- 1/4 cup vinegar
- 3-4 tbsp cornstarch
Add soy sauce, sugar, 2/3 cup water and vinegar. Bring to boil and stir until sugar dissolves. Blend cornstarch with 1/4 cup water. Add to sugar, soy sauce mixture.
Stir, cooking until thickened.
