I absolutely cherish every weekend morning that I get to spend with my husband and girls. Most of the year Shane has to work on Sundays so we only get Saturdays as our whole family for the whole day each week. It can be a major bummer. Recently he has been assigned to a projects team which resulted in the perfect change in his schedule and is home Saturdays and Sundays each weekend. Anyway, back to the point. I’ve been trying to come up with yummy big breakfasts each weekend and this weekend went for breakfast crescent rolls.
I saw the idea somewhere on Pinterest, I didn’t bother to read a recipe, I just sort of ran with it.
My Ingredients:
- 1 Tube Pillsbury Crescent Rolls
- 5 eggs, scrambled and cooked
- 4-6 slices bacon, cooked and crumbled
- 1/2 breakfast sausage, cooked and crumbled
- 1 cup (I think) of shredded cheese, any kind you like
I started by cooking all the bacon and sausage, I actually cooked a full package of each, so there are lots of leftovers in my fridge. Once those were done I preheated the oven to 375. I scrambled my eggs, I added 2-3 tablespoons of salsa to the mixed eggs before cooking, it gives it a nice flavor, near the end of the cooking I added the crumbled bacon and sausage so everything would stick together. Then it was on to assembling. Unroll the crescent rolls and sprinkle on the shredded cheese add the egg/sausage/bacon mixture and roll ’em up. Some of the goods were falling out of the sides of my rolls so I pulled up the points and stuck them to the top creating a little bun. Into the oven for about 13 minutes (I checked them after 10).
When I asked the hubs what he thought, his response was, “I need another one.” So I think that means he thought they were good. If not oh well, I thought they were damn delicious.
