I love the combo of banana, chocolate and coconut, doesn’t everyone? I know there are a million recipes out there for banana bread but I thought I’d try my own. Chocolate can be hard to incorporate into banana bread, I’ve had issues with it all melting together and sinking, but I’ve finally gotten it to work. The coconut flavor is subtle but the texture is good.
Ingredients:

1 3/4 cups all purpose flour

1 1/4 teaspoons baking powder

1/2 teaspoon baking soda

3/4 teaspoons salt

2/3 cup sugar

1/3 cup shortening

2 eggs
-
1 1/2 tablespoons milk

1 cup minus 2 tablespoons mashed ripe banana

1/4 cup finely chopped walnuts

1/4 cup shredded coconut
-
1/4 cup finely chopped semi sweet chocolate chips
Directions:
1. Stir together flour, baking powder, baking soda, and salt, set aside.
2. Combine sugar and shortening until creamy and light.
3. Add eggs one at a time and milk to sugar mixture combining well and smooth after each incorporation.
4. Add flour mixture and banana alternately and beat until smooth after each addition. 5. Stir in nuts, coconut and chocolate.
6. Pour batter into a greased loaf pan and bake at 350* for 1 hour or until toothpick inserted in center comes out clean.
7.Cool on wire rack.
Give it a try I think you’ll like it. I will definitely be making this again.
